  Roots & Shoots Microgreen Farm is a small-scale, indoor vertical farming operation built around sustainable production methods and a resilient local food system. 

The farm operates year-round in a climate controlled indoor environment, allowing crops to be grown regardless of season or weather. This approach gives us the ability to closely manage light, airflow, humidity, and water creating stable conditions where plants can grow strong, healthy, and balanced. Every stage of growth is observed closely, from seed selection and soil preparation to harvest timing.

Soil health is central to everything we do. We believe soil is a living system, not just a medium to hold plants in place. By focusing on soil-based growing and responsible reuse through composting and community partnerships, the farm stays connected to natural cycles even within an indoor setting.

Roots & Shoots Microgreen Farm was built with the idea that farming should be, local, sustainable, natural, and transparent. We use vertical farming methods organized for higher capacity, efficiency and food safety, with clear workflows for seeding, growing, harvesting, and handling. Consistency and reliability matters, not just for quality, but for trust.

We pay close attention to how plants grow and react, making thoughtful adjustments along the way and respecting the natural pace of the process rather than forcing speed. Our goal is to provide consistent access to fresh, locally grown greens while building strong partnerships within our community to support innovation in agriculture and local food systems. 

  Roots & Shoots Microgreen Farm in Coral Springs, FL was founded by Brianne Oliveira, a chef-turned-farmer with a deep respect for food, soil, and the systems that connect them.

Brianne’s background in professional kitchens shaped the way she approaches growing. Working her way into fine dining, she learned the discipline, precision, and artistry behind great food. Over time, she began to notice a growing disconnect between what was served on the plate and where ingredients came from. Long supply chains, declining freshness, and inconsistent quality.

That awareness led her outside the kitchen and into growing.

Through hands-on experience at the Coral Springs Community Garden and independent study, Brianne developed a strong connection to soil-based growing, composting, and plant health. What began as curiosity quickly became a calling. She immersed herself in learning how to grow food indoors with sustainable practices, mastering climate control, airflow, lighting, water quality, and local production systems to create consistent, high-quality results year-round.

Microgreens became the natural intersection of her skills. To Brianne, they are not just garnishes, but living ingredients. Vibrant, flavorful, and nutritionally dense, capable of transforming a dish while reconnecting people to fresh, local food.

Today, Roots & Shoots Microgreen Farm supplies local chefs, grocers, and consumers with soil-grown microgreens harvested to order, never sitting on a shelf. Every tray is grown with the same care, precision, and respect Brianne once applied to the plate — now rooted in the farm.

Her work is guided by a simple belief: that better food systems start locally, grow intentionally, and thrive through community, trust, and care for the earth.
